A graduation ceremony in Paris, for 113 guests. This format is like no other: the ceremony runs to time, the reception starts the minute it ends, and everyone arrives at once.

So we did the setting up beforehand, not during. Every piece is made in our own kitchen, arranged on slate and ready to serve the moment the doors open: no one waits, and service never crosses the room at the wrong time.

Individual verrines, bespoke floral arrangements, precise plating: the same care as a wedding, but a different demand: here, keeping to the schedule is what makes the evening.
